Making Lemonade

Too many lemons on the tree?  Then try your hand at this easy lemonade recipe. 

Ingredients

  • 2 cups lemon juice
  • 5 cups water 
  • 2 tablespoons of grated rind of lemon
  • 2 teaspoons Epsom salts
  • 25g packet tartaric acid
  • 1 teaspoon citric acid
  • Sprig of mint
  • 1kg sugar (For a low GI version, replace this with 2/3kg of Xylotol)

Method
Place sugar and water in a saucepan and stir over medium heat until sugar is dissolved.  Add the remaining ingredients except the mint.  Bring to the boil for 5 minutes before cooling the mixture.  Serve ice cold with a sprig of mint.

 
For other citrus drinks, replace the lemon juice and rind with the rind and juice of a different citrus such as limes or tangelo. If you use a very sweet juice (eg ripe orange) you will need to reduce the sugar in the recipe.
